Ask anyone what to do in Valencia and I can guarantee you will hear “eat Paella”. With that in mind, I went searching for where we should go to get it. I learned a lot in that search, mainly that paella isn’t really something you can just get (well you can, but it will be less authentic) because 1) it has a long cook time that makes it difficult for restaurants to just casually serve it, and 2) at the really good places a lot of people will reserve their pan 24 hours + in advance.
By chance, Nick, who is still working, had a call with someone at work who mentioned that when they had visited Valencia their favorite part of the trip was a Paella cooking class. We heard that and found one to book last minute-and it was excellent. We learned all the “rules” of Paella (like so seafood!), how to properly cook with an artichoke, and got to spend the day with an interesting group of people. This is the second cooking class we’ve done while on a trip and it was a good reminder that they are such a delightful way to engage with a place you’re visiting!
